Ingredient You’ll Need
- 5 Kg easy crave lamb’s leg
- 1 tbsp garlic and rosemary
- 2 & 1/2 tbsp olive oil
- 1 tsp cayenne pepper
- 2 tbsp rock salt or to taste
- 1 tbsp fresh ground black pepper
- 2 tsp honey, extra
- 1 tbsp smoked paprika
- 100g Greek feta
- 2 tsp oregano leaves
- 1 Kg small potatoes (washed)
- Aluminum foil
- Lemon wedges (to serve)
- Green salad, to serve (use cucumber, lettuce, green peas, or any other ingredient of your choice)
Sticky Honey Glaze
- 1/2 cup or 125ml chicken stock
- 1/2 cup or 125ml honey
- 2 tsp garlic & rosemary
- 2 tsp soy sauce
- 3 tsp cornflour
- 1 tbsp fresh lemon juice
Chef’s Note: The servings of green salad and lemon slice through the richness of stick lamb roast. You can opt for Desiree, Sebago, or Coliban potatoes for this recipe.
How to Make Sticky Honey Roast
Prep Time: 30 minutes
Cooking Time: 1 hour and 40 minutes
Total Time: 2 hours and 10 minutes
Yield: 6 servings
1) Prepare Your Oven/Grill
To begin your cooking, preheat the oven or grill 320°F (160-180°C) fan-forced for even heat distribution. It is a crucial step to cook tender and flavorful lamb roast and avoid sticking.
Pro Tip: Make sure your cooking appliance (oven/grill) is properly cleaned before preheating.
2) Prepare & Cook Sticky Honey Glaze
To make the sticky honey sauce, take a small pan and add chicken stock to it. Next, gradually add the cornflour and whisk it well until they mixed perfectly. Cook it over medium heat and add soy sauce, honey, and garlic & rosemary to the mixture. Then, cook and stir the mixture until it boils and thickens. At the end stir in the lemon juice and set the prepared honey glaze aside.
3) Season & Roast the Lamb
Now, Rinse and pat dry the meat. Use a small knife or fork to score the skin of the lamb all over (optional but enhance the flavor profile of your meat). Then, place the lamb in a large roasting pan or tray.
Next, add and mix well extra honey, salt, black pepper, cayenne pepper, extra honey, garlic & rosemary powder, smoked paprika, and 2 tsp olive oil in a small bowl. Use your hand to rub this honey and spices mixture all over the lamb. Place the roasting pan inside the preheated oven and roast it for good 20 minutes.
4) Toss & Season Potatoes
While your meat is roasting, peel washed potatoes and cut them into wedges. Take a large bowl and toss the potatoes with oregano and remaining olive oil. Then season with salt and a pinch of pepper.
5) Cook Potatoes & Brush the Lamb
Then it’s time to brush sticky honey glaze over the lamb. Take out the roasting pan from the oven and arrange the potatoes around the lamb. Brush the lamb with the honey glaze. Roast the meat for another 1 hour and 20 minutes. Make sure to brush the sticky honey sauce every 20 minutes while your lamb is roasting.
6) Rest the Roast
Once you roast the lamb perfectly, gently transfer it to a dish and cover it with a doubled sheet of aluminum foil and allow the sticky honey roast to rest for just 10 minutes in a warm place. It is an essential step if you want to enjoy tender and juicy bites of roast.
Chef Note: Once it rests for 10 minutes, you can slice it into pieces or serve it as a whole.
7) Prepare the Gravy
While your lamb is resting, take a small saucepan and add the leftover honey glaze to it. Cook it over a low flame for 2 to 3 minutes or until it boils, stir the mixture frequently. Transfer the warm gravy into a serving jug.
8) Serve the Stick Lamb Roast
Finally, take a large serving platter and shift the sticky honey lamb roast and potatoes in it. Then sprinkle the feta over the potato wedges. Drizzle the warm honey glaze/gravy over the honey roast to make it richer. Serve it to your friends or family with a green salad and lemon wedges.
